Now that we understand the characteristics of our vineyard we have been able to isolate the areas which produce the most complex flavours in our grapes. Together with cane pruning and hand picking we are able to have our grapes arrive at the winery in peak condition. The grapes are destemmed, and fermented in open fermenters using indigenous yeast and gentle plunging. After pressing to neutral French oak barrel, the wine was allowed to undergo malolactic fermentation in spring without inoculation. The best barrels were then selected for the Cambria and this special wine was bottled in Spring 2010 using the taint free DIAM cork.
Colour: Deep purple red
Nose: The aroma is rich in blackcurrant fruit and spice.
Palate: The sumptuous ripe flavours flood the mouth with an array of dark fruits; a long and velvety palate with elegant tannins complete a wine which we feel is close to perfection
